Baked Spaghetti Pie, Garlic Bread and Spring Salad

Happy Monday! I hope you had a great weekend! I had a wonderful time celebrating my bestie, Mia{MakeMeUpMia}, on Saturday for her birthday. Then, Sunday afternoon, Mia and I were able to celebrate the pending arrival of Cassie's {True Agape} sweet little girl. A fun, full weekend!

As you look ahead to this week, you might be needing a fast, family friendly meal. Well, I have just the dinner for you!

Baked Spaghetti with Garlic Bread and Spring Salad

Baked Spaghetti Pie
8oz spaghetti, cooked
2 eggs, beaten
1 cup ricotta or cottage cheese
8oz tomato sauce
1 tbsp Italian seasoning
1.5 cups Mozzarella cheese
 
1. Toss spaghetti with eggs & 1/2 cup cheese.
2. Pour into a greased pie plate to form a crust.
3. Spread ricotta over the crust, then top with tomato sauce, then Italian seasoning.
4. Bake uncovered for 30 minutes at 350 degrees.
5. Top with 1 cup mozzarella cheese.
6. Bake 5 more minutes, cool 5 minutes.
7. Cut into wedges, enjoy!
 
I picked up a frozen loaf of garlic bread and a fresh Spring Salad mix from my local farmer's market to pair with this dinner. Delish!

Poppy Seed Chicken, Soy Sauce Green Beans & Blueberry Bread

Hopefully you're enjoying this day with family and friends, cooking out, as we unofficially kick off summer. That's what we're doing! Yay!!
 
Surely you'll need a meal idea later this week, though, and I have just the meal for you....Poppy Seed Chicken, Soy Sauce Green Beans and Blueberry Bread. 


 
 
Poppy Seed Chicken
8 cups cooked chicken, chopped
2 cans cream of chicken soup
2 cans cream of celery soup
16 oz sour cream
2-3 tablespoons poppy seeds
 
Topping:
1/2 stick butter, melted
1 cup crushed crackers
shredded cheese (at your discretion)
 
Mix ingredients together and put in a 9x13in baking dish.
Put crackers on top and drizzle with butter.
Sprinkle with cheese.
Bake at 350 degrees for 30-40 minutes.
Serve over rice and enjoy!
 
Soy Sauce Green Beans
2 cans green beans (or 1 pound fresh)
soy sauce
 
Drain green beans and place in pot.
Drizzle with soy sauce and heat through.
Enjoy!
 
Blueberry Bread
{totally cheated and used a box mix}
Enjoy!

Homemade Sloppy Joes with Roasted Sweet Potatoes

Happy Monday! I hope you enjoyed a good weekend with those you love, doing what you love!

I've been brainstorming over my blog, wanting to bring the best content possible to y'all, which has lead me to change my Moday recipes to a Monday meal. I'll share with you simple weeknight meals my family enjoys and hope y'all will enjoy them, too! {Also, I'd love to hear what you enjoy reading most from me, so please send me your thoughts!}

This one of my all time favorite dinners! Seriously, once you enjoy homemade sloppy joes, you'll never make Manwhich again! It's super easy, makes a ton {even when I half the recipe} and tastes just as good the second and third time you reheat it!

 
Sloppy Joes
5 lbs hamburger
5 green peppers, chopped
5 onions, chopped
2 celery stalks, chopped
1 large Ketchup
1 cup brown sugar
1 cup mustard
1/2 cup Worcestershire sauce
2 1/2 tsp chili powder
salt & pepper to taste
 
Brown hamburger with onions. Add remaining ingredients and simmer for at least an hour or until consistency wanted.

 
Roasted Sweet Potatoes
3-4 sweet potatoes, chopped
olive oil
cinnamon & sugar, to taste
honey, to taste
 
Heat oven to 400 degrees
Coat sweet potatoes in olive oil, then sprinkle with cinnamon & sugar
Roast in oven for 30 min.
Drizzle with honey & serve.
*The roasted sweet potatoes were adapted from Mia's recipe.
 
I hope you enjoy this meal as much as we do! The sloppy joes are so easy and very customizable, so just adjust the ingredients as needed to accomodate your needs!

Kale Salad

Today I'm co-hosting a 'healthy recipe' link up with Cassie @ True Agape and some other lovely ladies. If you have any favorite 'healthy', which I understand is rather broad, recipes you'd like to share, link up below!

Last year I signed up for The Fresh 20 and found an awesome massaged kale salad I wanted to share with you. I had actually never tried kale until I made this salad and I was pretty unsure about it. But let me tell you, I fell in love with kale after having this salad. If you don't already enjoy kale, I hope you will after trying this massaged kale salad.

Frozen Fruit Cups

Happy Monday! I hope y'all had a great weekend. We spent the weekend building a play set for the kiddos. It was no quick job, but their smiles & laughs while playing on it make it completely worth it. :)

The weather was beautiful this weekend! In fact, it made me think of one of my favorite spring & summer snack recipes. So refreshing & filling, especially when you're playing all day outside or splashing in the pool.

Apple BBQ Chicken

Chicken Taco Casserole

Today I'm taking the lazy way out with my Monday recipe. I'm sending y'all over to Six Sisters' Stuff for a delicious dish I made this past week. The whole family ate this dinner up and we enjoyed the leftovers for lunch the next day! I'm sure you will enjoy it, too!

Sweet & Sour Chicken

I threw out the teaser last week that I'd have an incredible recipe for you this week...and the time has come! If you follow me on Pinterest, you may have seen this pinned a few weeks ago. It's Sweet & Sour Chicken and it.is.delicious! Robert took one bite and seriously said "This is better than P.F. Changs!". Now, I don't know if I would say that, but it was so, so good. You need to make it this week and let me know what you think!

Slow cooker Cabbage Rolls

My mom made a delish dish on a cold night last week that I loved so much I just had to share with y'all. Technically, I didn't make it, but it was too good not to share! We paired it with some yummy Rhode's rolls.

Slow Cooker Cabbage Rolls
 
1 large head cabbage
1 can tomato sauce (8oz)
3/4 cup minute rice
1/2 cup chopped bell pepper
1/2 cup crushed saltines (about 15 crackers)
1 egg, lightly beaten
1 ounce onion soup mix
1 1/2 pounds lean ground meat
1 can V8 juice (48 oz)
Salt, to taste
Grated Parmesan cheese, optional
 
1. Cook cabbage in boiling water just until leaves fall off head. Set aside 12 large leaves for rolls; drain well. (refrigerate remaining cabbage for another use) Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut; set aside
2. In a large bowl, combine the tomato sauce, rice, bell pepper, cracker crumbs, eggs & soup mix. Crumble beef over mixture and mix well.
3. Place about 1/3 cup meat mixture on each cabbage leaf; overlap cut ends of leaf. Fold in sides, beginning with the cut end. Roll up completely to enclose filling. Secure toothpicks if desired.
4. Put cabbage rolls in a slow cooker. Pour V8 juice over rolls. Cover and cook on low for 6-7 hours. Just before serving, sprinkle with salt and cheese, if desired.

Sausage Breakfast Casserole

I've talked before about my love of breakfast for dinner. And this recipe fits perfectly in that category. This is one that I can make a day ahead of time and pop in at dinner and have a yummy dish that the whole family eats up! Yes, please!

I like to serve it with salsa and blueberry muffins. Mmm-mmm, good! :)

Mexi Dip

My Aunt makes a dip called Mexi Dip that has become a family (and friends) favorite. It's no secret that Mexican food is my favorite food, so I like to make this for dinner occasionally and serve it on tortillas, like a burrito, in addition to tortilla chips. It's easy, fast & delicious! I hope you enjoy it, too.

Sausage Tortellini Soup

This past week I made an amazing crock pot soup. I found it from Andrea @ The McAnally Family and she found it from a friend, who found it on Pinterest. Ha! Did you follow that?! Anyway, this soup was so full of flavor and so easy to make! If you love easy and delicious, you'll love this!

Chicken Casserole

Growing up, my mom would make this dinner and it's still one of my favorites today. For me, it's super comforting and a great, simple go-to meal on busy week nights. It's nothing fancy, just simple home cooking. I hope you enjoy it, too!



 
Many times when she would make this dish, she would serve it with Pillsbury Date Bread and y'all, this was my favorite bread ever!!!!! I would seriously request it for my birthday or any special occasion because I loved it so much. And now it can't be found. I've looked for years, truly years, and have come up empty! Have you ever heard of it or had it before? If you can find it in your grocery store, please let me know!!

Chicken Pasta

This past week I made the most amazing Chicken Pasta! I'm not even kidding, this meal was delicious!!! We all ate it up and "ooh-ed and ahh-ed" about it the entire time. Even the kiddos. Now that's saying something!

I found this recipe from a blogging friend, Becky at This is Happiness. If you haven't checked her blog out yet, you need to. She has all kinds of awesome DIY projects, fantastic recipes and an adorable family! You'll love her!

So, here's the recipe. Put it on the menu tonight...or as soon as possible. You won't be disappointed!

Tortellini Taco Bake

A few weeks ago I made Mix and Match Mama's Tortellini Taco Bake and it was a huge hit with my family! I'm pretty late in the game to the different tortellini packages you can pick up at the grocery store, but boy are we all loving them! I think you will, too! {Side note, if you haven't visited Mix and Match Mama before, you should definitely check her out! She's full of great, easy recipes!!}

Homemade Pancakes

Typically, we don't have big breakfasts around here. Robert leaves early and the kids get up at different times, so we just have a mix and match breakfast. Saturdays are the day we'll have a big breakfast, if we do them at all. But, we do enjoy breakfast for dinner. Growing up my mom would always make homemade pancakes from a recipe my Uncle gave her. And they are delicious! Maybe you'll love them, too!

Chilaquiles Casserole

I recently went through my Pinterest boards and cleaned them up a bit and organized my recipes better. While doing that, I came across a recipe I used to make that we all really enjoyed and thought I'd make it again. We loved it (again), so I wanted to share it with you. It's called Chilaquiles Casserole (please, somebody tell me how to say that name) and I pair it with Mexican Rice. Enjoy!

Ham, beans and corn bread

Whew, what a wonderful week and weekend it has been with family and friends! I sure hope you had a great Christmas with those you love! I'm looking forward to doing a Christmas recap very soon. But until then, here is a favorite 'after Christmas' meal.

If you're like me, you over estimate how much ham you'll need for Christmas dinner and always end up with lots of leftovers. In my family, and maybe yours too, we take that ham, put it in a pot with some Great Northern Beans, fill it with water and let it cook all day. The ham falls off the bone by the end of the day and you have a ham & bean soup. We pair it with chopped onions and homemade cornbread. It's a very easy way to use up the leftovers and provide plenty of food for another big family meal.

Chocolate Crinkles

Chocolate crinkles are probably my favorite cookies ever. I mean, who doesn't love chocolate cookies?! Well, Robert isn't a huge chocolate fan (what?! how is that even possible?!) but these cookies he gobbles right up. Although I make them some throughout the year, they are certainly a Christmas staple at our house. If you haven't had them before, you must make a batch...today. Go, now! :)
